As head chef in many fine restaurants in my younger days I am trying to protect the Authentic classical italian recipe base from vanishing all together- Too many Chefs simply don't know what the classical recipes of italy are- Many customers have never tasted the real thing either (Yet most think they have)- and being italian does not make you a italian cook- I am one of the few Chefs In Australia who has studied the classical italian cookery base and practiced as such in restaurants-I've stopped cooking for some time now due to health reasons - and advise recipes on the USA www. Allexperts.com site for the past 10 years-Nevertheless- The Art and science of italian classical Cookery has remained in my blood, and is still one of my favourite past time hobby of passion, and continue to teach others the true application as an expert of such-
