As head chef in many fine restaurants in my younger days I am trying to protect the Authentic classical italian recipe base from vanishing all together- Too many Chefs simply don't know what the classical recipes of italy are- Many customers have never tasted the real thing either (Yet most think they have)- and being italian does not make you a italian cook- I am one of the few Chefs In Australia who has studied the classical italian cookery base and practiced as such in restaurants-I've stopped cooking for some time now due to health reasons - and advise recipes on the USA www.
